Justin Cucci, founder and restaurateur behind Denver’s Edible Beats restaurant group, will celebrate the release of his print zine, The Edible Beat, with a live Q&A, booksigning, and food and drink!
Edible Beats includes Root Down, Root Down DIA, Linger, Ophelia’s, Vital Root and El Five. They’re a diverse group with a common thread: vegetable-forward, sustainably-sourced menus in imaginative spaces, and a commitment to sustainability through the cultivation of organic vegetable gardens, food waste programs, and wind-powered buildings. The restaurants have won awards ranging from Design of the Year and Top Charitable Pick to Most Sustainable Menu. Justin has been featured by The New York Times, Bon Appétit and Condé Nast, and has appeared on the Cooking and Travel channels.
